From breakfast in the sunshine to dinner under the stars, Rachel's renowned culinary skills make five-star dining a certainty. A graduate of the La Varenne school of cookery in France, Rachel offers freshly prepared local delicacies and finely cooked international favorites. Cocktail hour starts early and Richard will tempt you with Caribbean flavors as the sun goes down.

Breakfast

All start with fruit juices, a fruit platter, selection of cereals, teas and coffee. Followed by a choice of:

Eggs Benedict and crispy bacon on an english bagel.

Cornbread cakes with slow-roasted tomatoes.

Scrambled eggs in popovers.

Glazed french toast with fresh berries.

Spanish herb omelette.

Potato latkes with grilled portobello mushrooms.

Criossants, muffins and pancakes.

Lunch

Served with a salad and fresh bread.

Fettucini with pepper & tomatoes.

Barbequed steakettes with pesto sauce.

Classic Quiche Lorraine.

Trompette & parsley risotto.

Deep pan creole pizza.

Fresh goats cheese and spinach pie.

Seafood salad platter.

Hords d'Ouevers

Served with the Captain's cocktail of the day.

Savoury phyllo parcels.

Mini kebabs with a tangy salsa.

Caramelised onion and feta tartlets.

Hot cheddar puffs.

Chilli stir-fried shrimps.

Calzones.

Sweet and sour chicken wings.

Dinner

Duck with Bigerade sauce, baby new potatoes and wilted greens.

Rosemary infused rack of lamb, creamy potato mash and glazed root vegetables.

Red snapper en papilotte with stir fry vegetables and saffron rice.

Barbequed fillet of beef with a red wine jus, sauteed potatoes, green beans and corn on the cob.

Aubergine stack with penne, crispy green salad and baked potatoes.

Grilled pork chops with a spicy fruit sauce, sweet potatoes, and shredded vegetable leaves.

Tuna steak, grilled with a citrus butter, potato wedges and coleslaw.

Desert

Almond meringues with strawberries and whipped cream.

Melon & mint sorbets.

Espresso mousse and crispy tuilles.

Rum and raisin cheesecake.

Individual citrus souffles with creme Anglaise.
